Griddled Baby Gem with Parmesan and Lemon Dressing

you-will-need

  • 2 baby gem lettuce
  • 2 tsp olive oil
  • ½ lemon
  • 30g parmesan finely grated

what-to-do

  1. Trim the stalk of the Baby Gem and cut in half length ways. Brush the lettuce all over with oil and season.

  2. Heat a griddle or frying pan and cook, cut side down for 1 minute until they start to char. Turn the gems over and cook each side of the curved back of the lettuce for a minute. Repeat the process of charring on all sides.

  3. Remove from the grill and squeeze over the lemon juice and sprinkle with parmesan and black pepper making sure that it falls in between the leaves to the centre of the lettuce. Serve immediately.

    Salad Used: Baby Gem lettuce
